Bean Soup
When the waitress in a New York City restaurant brought the customer the soup du jour, the man was a bit dismayed. "Good heavens," he said, "what is this?"
"Why, it's bean soup," she replied.
"I don't care what it has been," he sputtered. "What is it now?"
Spring Mix OR Field Greens, also called Mesclun, is a classic green salad mix originating in the South of France. It consists of a mixture of very young leaves and shoots of wild and cultivated plants, including endive, dandelion, arugula, lamb's lettuce, oak leaf, mache, radicchio, chervil, sorrel, frissee, purslane, etc. Sometimes edible flowers are included.
